Soil: “Ponca”, sandstone and marl.
Harvest Period: first half of September.
Vinification: soft pneumatic press, skin separation. Cold decantation and controlled-temperature fermentation (18°C) for a maximum of 20 days in stainless steel tanks. 4 months “sur lie” with bâtonnage.
Alcohol Content: 13% by vol.
Residual Sugar: 3 grams per liter.
Color: pale straw yellow.
Aroma: intense spectrum of fruit and white floral notes.
Palate: dry, smooth, balanced with good body.
Food Suggestions: champignons, seafood sauté, grilled fish.
Serving Temperature: 8-10 °C / 46-50 °F.
