  • Soil: “Ponca”, sandstone and marl
  • Harvest Period: first half of September
  • Vinification: soft pneumatic press, skin separation. Cold decantation and controlled-temperature fermentation (18°C) for a maximum of 20 days in stainless steel tanks. 4 months “sur lie” with bâtonnage
  • Alcohol Content: 13 % by vol.
  • Residual Sugar: 2 grams per liter
  • Color: pale straw yellow
  • Aroma: intense spectrum of fruit and white floral notes
  • Palate: dry, smooth, balanced with good body
  • Food Suggestions: mushrooms, seafood sauté, grilled fish
  • Serving Temperature: 10°C / 50°F
