Average age of the vines: 20 years.
Soil: calcareous clays in the NE area, Marl in the SE area, sandy solis and sandstones in the SW.
Harvest Period: end of September / beginning of October
Vinification: traditional processes without exaggerating the extractions but calibrated according to the raw material, with pump over max 40% volume/day and maceration at 30°C in post fermentation for 15/20 days. Maturation in barrel of 50 hl for 24 month more 4 months in bottles.
Alcohol Content: 14% by vol.
Residual Sugar: 2 grams per liter.
Color: intense ruby red with nuances tending to garnet red.
Aroma: rich and complex, notes of red fruits jam, cherry and violet with light tertiary nuances.
Palate: fresh, silky and elegant with a precise tannic structure. Very persistant finish with a pleasant aftertaste of cherry and chocolate.
