Grape Varietals: 100% Sangiovese Grosso.
Vineyards: high part of the hill of Montalcino.
Average age of the vines: 25-30 years.
Soil: clayey, with important presence of sand and skeleton.
Harvest Period: second half of September.
Vinification: cryo-maceration for at least 10 days at climbing temperatures. Followed by fermentation for another 20 days at controlled temperature. Post-malolactic maturation for 12 months in French oak barriques, followed by 18 months in large Slavonian oak casks. Subsequent aging in bottle for at least one year.
Alcohol Content: 14% by vol.
Residual Sugar: 2 grams per liter.
Color: intense ruby red with nuances tending to garnet red.
Aroma: notes of underbrush and small red fruits, nuances of vanilla and spicy finish.
Palate: soft and persuasive, with important presence of velvety tannins that balance sapidity and persistence.
Food Suggestions: red or stewed meats, traditional first courses and fresh cow or sheep cheeses.
Serving Temperature: 16-18 °C / 61-64 °F.
