Grape Varietals: 100% Negroamaro.
Vineyards: Salento area, part of the Taranto province.
Average age of the vines: 10-15 years.
Soil: Clay.
Harvest Period: Second half of September.
Vinification: Grapes harvested by hand, short cold skin maceration for ten hours to protect the primary aromas, followed by a soft pressing. Low temperature fermentation with selected yeasts and refinement in stainless-steel tanks, on fine lees, at controlled temperature.
Alcohol Content: 13% by vol.
Residual Sugar: 3 grams per liter.
Color: Pale pink with peach reflections.
Aroma: Fine and elegant on the nose, it presents a fruity bouquet that recalls small red fruits and wild strawberries.
Palate: In the mouth it is fresh and mineral, with a nice acidity and a fruity aftertaste.
Food Suggestions: Perfect as aperitif, it pairs well with dishes based on fish, raw fish, sushi, and pasta salad with fresh seasonal vegetable.
